http://www.uhfcb.com.au/80-Channel-UHF-Information.php website has the following chart on which channels are used and their purpose.  Additional uses when known have been added to the list hereunder and to the printable chart. 

Channels 5 and 35 are reserved for emergency use only; monitored by volunteers.  No general conversations are to take place on this channel.  Severe penalties for misuse apply.
 
In addition to the above channel allocations, as noted above channel 20 has been selected as channel for motor homers to communicate when in convoy in a similar manner to channel 18 being used for caravanners to communicate when travelling in convoy.
 
On certain roads a different channel may be used by local traffic, and where this is signed, it is wise to change to that channel.  Of course change channel to have a conversation with someone in your convoy so as not to block the road channel. 
 
While channel 40 is the higway channel, on the Pacific Highway in New South Wales channel 29 is used, and this extends across the border on the Bruce Highway into Queensland, possibly as far as Brisbane.  If unsure, set your receiver to scan both channels.
